A little Surprise

This past weekend I was in Washington, DC visiting my boyfriend. He attends Catholic University, and I always wanted to go back to DC to sight see. So I figured why not go when I'm done with my first mod at Le Cordon Bleu for a long weekend. If you have never been to DC, it's a "must see," place. It's just purely awesome! And one of the best features is you get to sightsee for free!!

Well, I have a little surprise for the viewers out there.....

I got to visit Julia Childs kitchen at the Smithsonian!!!!! :)

The American History part of the Smithsonian. If you have never been to DC The Smithsonian is made of up several different buildings.

I thought I would share some of my pictures I took this past weekend, since Julia Child is still a very famous chef and people look up to her everyday!!!

This post is being dedicated to her and every culinary student attending Le Cordon Bleu. So enjoy looking into the world of Julia Child's Kitchen!!!

My First Fruit Arrangement!

This blog I decided to upload something I did in class. This was my first attempt into making something that deals with my pastry major at Le Cordon Bleu. My classes are broken up into mods, so every six week I get new classes along with new chefs to work with. Tomorrow I will be entering into my part of my major, so no more Culinary classes for me. I will be in a bread making class and a math class.

Here below is my Fruit Arrangement, My first attempt to making something pretty, it was a lot of fun, but somewhat frustrating, because as you all know fruit tends to be slippery, so when you are trying to stack it on top of each other it could be a little tricky!!



The arrangement consisted of Kiwi, a strawberry, blueberries, raspberries, honeydew, and pineapple. I have to say it was completely amazing! The white with the red design is fruit sauce with raspberry dressing. It was better than chocolate!


I would love to make it again! It was a lot of fun, so I am thinking maybe for my moms birthday in November or our annual Christmas party... but it will definitely be in the near future!!!!

How to make Red Velvet Chocolate Bites !!!!

So, my last blog was about the Red Chocolate Velvet Bites, so if anyone was wondering how to make them it's quite simple and fun to make. I also have to admit, they are quite good and addicting to eat and make!!!! Sooo here's the secret behind them...... :)



1. Get Red Velvet Cake Mix- You are going to make the cake as if you were making a cake. Except when it cools instead of leaving the cake whole you are going to crumble to cake into pieces.

2. Then you can either buy or make your own Cream Cheese Icing. But before you go any further, your crumbled cake has to be cool. And your Cream Cheese Icing has to be at room temperature. Then combine the cooled, crumbled cake and cream cheese icing together. Make sure the cake is covered and everything is well mixed together. I will warn you this will get messy!!! I made my own Cream Cheese Icing, and if you wanted to make your own I will give you the recipe I used.

Ingredients
4 oz. (1 stick) butter, room temperature
8 oz. cream cheese, room temperature
1 lb. confectioners' (powdered) sugar
1 tbsp. milk
2 tsp. vanilla extract
2 tsp. freshly grated lemon or orange rind (optional)

Instructions:


1.Combine cream cheese and butter in a mixing bowl. And mix on medium speed until both ingredients are well blended.

2.Increase speed and whip until mixture is light and fluffy.

3.Reduce speed to low and add sugar slowly. Combine thoroughly after each addition.

4.Add milk and vanilla on low speed. Add rind if using. Combine completely.

5.Increase speed to high and whip until very light and fluffy. Makes about 2 1/2 cups icing.

3. Then you make balls out of the Red Velvet Cake and Cream Cheese Filling. Put them on cookie sheets, and allow them to refrigerate for about 2 hours until they are cool and become somewhat harder (not as moist). I left mine in the refrigerator overnight.

4. As for the chocolate you can go and purchase and kind of chocolate you want. There's Milk Chocolate, Mint Chocolate, Dark Chocolate, White Chocolate. Wilton makes nice melting chocolate. You can usually buy them at Michaels Arts and Crafts, or any baking store. You can either use the double boiler method or the microwave method, whichever one your prefer.

5. Submerge each chocolate ball into the melted chocolate and place on wax paper. You may decorate them anyway you want. ( If you want the chocolate to be thicker allow the chocolate to harden a bit before dunking the chocolate balls in the melted chocolate for a second time)

6. When you are done with one tray, put them back into the fridge. And repeat the same process for each tray.

7. I would recommend that you keep them in the fridge. And when they have completely cooled you can put them into one container.
